Pumpkin Donut Muffins

This past Sunday I ran a 15K race! I didn’t want to share out of fear that I would never sign up (I signed up the last day of “pre-registration”) or just not show up.  However, I made it through all 9.3 miles, the furthest I’ve ever ran.  I will do a second post on the training and all that jazz but for now I give you Pumpkin Donut Muffins.  They are similar to the Cinnamon Sugar Puff muffins I made a little while ago but with Pumpkin for Thanksgiving :)

They are mighty fine, my dad said that these cinnamon sugar muffin’s are “the best non-chocolate thing you [that's me!] make.”

They aren’t too complex either! And the best part? They are freezer friendly! I froze 10 UNsugar-cinnamon-ed and now all I need to do is defreeze, place in oven to reheat and then coat with butter and sugar as I normally would.  With the plethora of Thanksgiving desserts I have on my agenda, freezer friendly recipes are the best!

Now for the pumpkin puffers (what I call these muffins)

What you’ll need: butter, flour, baking powder, baking soda, salt, pumpkin pie spice, cinnamon, buttermilk, pumpkin puree, light brown sugar and eggs.  You’ll also need cinnamon and sugar to coat the muffins in POST baking.

In a small bowl mix together the buttermilk and pumpkin puree.  Set aside.

Mix together flour, baking powder, baking soda, salt, pumpkin pie spice and cinnamon in a medium bowl and set aside.

In a large mixing bowl, beat butter and brown sugar until light and fluffy.

Beat in eggs, one at a time.

Now add the flour mixture (in 3 installments)

Alternating with the pumpkin/milk combo (2 installments)

Scoop 1/3 cup of batter into each GREASED muffin tin and bake for about 30 minutes (until it passes the toothpick test)

Allow to cool for 10 minutes on a cooling rack

Dip the puff COMPLETELY in melted butter…look at the glossy shine :)

Then immediately roll in a mixture of cinnamon and sugar

Bite.
